Last Week of “Official Whole 30” Menu & Recipes

Can hardly believe that this Tuesday is my last official day of my first Whole 30 experience!  I plan to do a complete recap post once it’s over sharing my thoughts on the whole experience.  My husband and I plan to follow the guidelines of eating we’ve learned over the course of the past month, but with a few paleo options thrown back in here and there as well.  For example, I will most definitely add my morning post BBG protein shake with frozen berries.  I use vegan Shakeology so it’s a plant based protein anyways.  And while I have had my coffee black all month, and truly haven’t hated it, I REALLY enjoy a very small portion of stevia added to it.  So I’m planning on add that back in.  Other than that, nothing REALLY has been calling my name as a MUST HAVE!

Of course I MUST make the Sweet Potato Frittata (click link) again that I’ve made several times during the month.  Both my husband and I LOVE LOVE LOVE this breakfast dish.  Can’t recommend it enough!

I love soup!  I love trying new soups and they are so easy to make.  It usually makes enough for several meals which is always awesome!  I’m excited to try this Roasted Tomato Basil Soup.  (click link) Who cares that we are still sweating to death from the brutal Florida heat.  I’m just going to pretend it’s actually fall here too! LOL

Since this soup doesn’t have any protein in it, I’m going to make up a simple chicken salad to go with it:  Grilled chicken (cubed), homemade mayo, red grapes, celery & walnuts.  Yummmm

I’m super excited about creating this Spicy Asian Zucchini Noodle (click link) bowl!  I mean, you had me at Almond Butter…anyone with me?!

One thing I’ve learned over the course of the last month, Aidell’s Chicken sausages ROCK and any dish I can throw everything into one pan is always a winner!  So when I saw this Zucchini & Sweet Potato Hash (click link) paired with the chicken sausage, I was like HECK YA!

Okay, please tell me I’m not the only one that slapped myself silly when I saw this Stupid Easy Spaghetti (click link) ingenious cooking hack! Why didn’t I ever think of adding the spaghetti squash to the cooking meatballs in the crock pot???  Oh my word!  Genius!!!

I would easily say that prior to Whole 30, I had a Chipotle addiction.  Like seriously love that place.  Since their food is mostly non-compliant (except salad, carnitas, salsa, and guacamole) I have only been there ONCE in the past 28 days.  That is HUGE for me!  But when I saw this Slow Cooker Beef Barbacoa (click link) recipe, I thought I could recreate the meat I love to get at Chipotle right here in my kitchen!

I plan to pair the barbacoa with these delicious Sweet Potato Fritters. (click link) These bad boys get gobbled up around here for breakfast, lunch and dinner.  They are SO GOOD AND SO EASY!

I’m heading to the Florida State vs. University of South Florida game this weekend, so I’ll be eating out with girlfriends for several meals.  But I’m planning on prepping everything I need for the Slow Cooker Hawaiian Chicken so that my husband can plop everything into the crockpot for me Sunday morning!

    I love, love, love your mission and call to action to be fit and great role models for our children! I’m staring down 42 with two littles but thanks to paleo, CrossFit and my current Whole30 I’ve never felt better.

  2. Hi Tiffanie I’m wanting to start whole30 but not sure what I need to do. Did you just cook the recipes or did you follow a proper program? I’m not sure what book to read to get all the information. Your journey has inspired me to finally get my arse in to gear. Currently on holidays and can feel my stomach growing and want a kick up the bum when we get home. I want my abs back after my second baby

    1. I read the Whole30 book. It’s important for you to understand the WHYS of how certain foods react in your body. And then I used recipes I found in that book along with others I found online, etc. to make up my menu
